La Cappellana
- Style: Ramona Farmhouse Ale
- ABV: 6%
- Bitterness: 57 IBU
Nobody would blame our mother for retiring after being a math teacher, high school counselor, and mother to four rambunctious kids (including our head brewer - Grant). Instead, she defied expectations and attended divinity school in Berkeley for two years, becoming a Chaplain and opening a whole new chapter in her life. Like our mother, La Cappellana is completely unique - fermented 100% with a strain of Brettanomyces from a Monastery in Belgium and hopped with 100% locally grown Star B hops giving this beer a uniquely funky Belgian character with a citrusy aroma and flavor.
Dowser
- Style: Düsseldorf Altbier
- ABV: 5.4%
- Bitterness: 44 IBU
Dowser is inspired by Alek Jankowski, a professor of Chemistry who believed in the properties and power of water. He practiced the art of dowsing, or searching for ground water with a Y-shaped dowsing rod. This brew has a nice hop presence and crisp malty flavor developed through the traditional German technique of decoction mashing, where a portion of the mash (steeping grain) is boiled. Like dowsing, the utility of decoction mashing is often questioned, but we think the resulting maltiness and creamy mouthfeel speak for themselves.
The Weiss
- Style: Berliner Weiße
- ABV: 4.5%
- Bitterness: 6 IBU
“The Weiss”, as it would have been called in the old beer cellars of Berlin, is our take on the Berliner Weisse style. It is a light colored, tart, and refreshing wheat ale. We prefer it in the traditional style - not too sour - so that it can be drank in the traditional manner - in giant cylindrical bowls over the course of hours. Try a pint of each: ‘green’ with Woodruff syrup or ‘red’ with Raspberry.
Revolving Cask Series
Stephen Fraley was discussing the Civil War when men rode their horses in with a grudge. As his two comrades scattered and were shot, Fraley evaded his assailants by running inside and hiding under his wife’s large hoop dress. In memory of his escaping the fate of a revolver, we brew a rotating style suitable for cask conditioning in the traditional British manner. Cask conditioned beer is naturally carbonated and unfiltered, served at cellar temperature.
- Current Style: Sticke Altbier dry-hopped with El Dorado
- Past Release: Sticke Altbier dry-hopped with Spalt Select
- On Deck: British ESB
The Hussar
- Style: Grodziskie (Grätzer)
- ABV: 4%
- Bitterness: 25 IBU
The Hussar is inspired by our Polish ancestor who fought in the battle of Vienna alongside king Jan Sobieski. Dressed in suits of armor with giant metallic 'wings', hussars struck fear in their opponents and were widely known to be part of the most deadly calvary on the European continent at the time. In his honor we brew this golden, oak smoked wheat ale with a floral hop bitterness and noble aroma from Polish hop varieties.
Breton
- Style: Historic Porter
- ABV: 4.7%
- Bitterness: 54 IBU
Our Irish relatives handcrafted the now antique Breton & Sons watches and clocks in County Cork, Ireland. Sparked by their attention to detail and craft, we turn back the clock to 18th century porters, which were brewed with brown malt and experienced secondary fermentation with the wild yeast Brettanomyces. The result is a roasty deep brown ale with a dry finish accented by Sybilla hops.
Conductor
- Style: Baltic Porter
- ABV: 9%
- Bitterness: 42 IBU
Every day, our great grandfather would open the top drawer of his dresser, and pull out one of the many pairs of pristine white gloves. In his time, being a conductor of the coal-powered trains was a position of power and prestige, symbolized by those spotless white gloves. He traveled from the Great-Poland region to the Baltic Sea on a daily basis, and is the inspiration behind our Baltic Porter - a rich porter with dark fruit and molasses notes.
Trading Co. EIPA
- Style: British East India Pale Ale
- ABV: 7.5%
- Bitterness: 100+ IBU
Our first barrel-aged beer, an East India Pale ale brewed with a pale British malt backbone, hopped with UK Admiral hops. This beer was aged in shaved French Oak barrels and then dry-hopped with East Kent Goldings. The result is a nice balance of oak, malt, and peachy hops!
Dunkel
- Style: Munich Dunkel
- ABV: 5.5%
- Bitterness: 44 IBU
ChuckAlek Dunkel is a dark copper-brown German Lager with smooth honey and nutty malt notes blended nicely with German Perle and Polaris hops.
